Brussel sprouts and chestnuts are in season at the moment, so this is a great soup to make. It’s such a classic winter warmer too and the Brussel sprouts and chestnuts go oh so well together.

Here’s what you need:

1kg Brussel sprouts
15-20 cooked chestnuts
1 onion, chopped
1 large clove garlic, crushed
1.5 pints of vegetable stock
2 teaspoons tarragon
Olive oil

Here’s what you do:

:: In a saucepan, gently heat some olive oil and add the chopped onion and garlic
:: Saute until golden brown
:: Add the Brussel sprouts, stock, tarragon and simmer until they Brussel sprouts are soft enough for a knife to go through them
:: Add the chestnuts and cook for a further two minutes
:: Remove the pan from the heat
:: Blend until smoothe
